Carrageenans are gelling agents of plant origin: they are extracted from red algae (Rhodophyceae) from the North Atlantic, South America or Asia. Different origins and growing conditions produce carrageenan with different qualities and variable characteristics. Their gelling properties were discovered more than 6 centuries ago: in the Middle Ages, the Irish were using it for medical purposes as well as for food, and they were particularly known for gelling the milk. In France, these algae, called “white seaweed”, were used to make pudding by simply heating the algae in some milk. The Iota carrageenan is manufactured in France (Channel) or in the Philippines. It presents itself in the form of a white powder, odourless and tasteless, and is mainly composed of fibre (46%).
